Description

This Maturmeat Stagionello® 100 Kg Meat Curing Cabinet is manufactured using AISI 304 stainless steel for the body and doors. The non-porous material facilitates easy cleaning while the CFC-free polyurethane foam insulation maintains a high R-value. Unlike standard units, it features an industrial refrigeration system designed for seasoning and dry aging.

The Climatouch® controller manages the internal environment via a 6" touch screen display. It automatically regulates sequential processing stages for dry aging meat, with internal memory capable of storing approximately 100 recipes. This specific model provides a 100 kg capacity and includes 5 guide sets and 5 stainless steel shelves to organize product.

Equipped with the patented Fumotic® system, the unit regulates humidity and flavoring without combustion. The dual insulated glass panels provide UV protection and include resistance lines to minimize condensation at lower temperatures. A pre-calibrated pH probe connects to the PLC to monitor acidity levels and save data for HACCP compliance.
